Don’t underestimate this extremely easy breakfast

1 papaya (preferably papaya but a pawpaw will make a good swop)
2 tbs Greek yogurt, coconut yogurt or soy yogurt
1 tbs pumpkin seeds (or sunflower or flax)
1 tbs granola
1 tbs flaked coconut (or flaked almonds, pecan nuts)
Strawberry, blueberries or kiwis
Lime wedge (optional but highly recommended)

Method

Cut the papaya in half, lengthways.
Trim the base of the papaya so that it will be stable in the bowl or plate.
Scoop out the seeds from the papaya and discard or save to eat later.
Spoon yogurt into papaya halves.
Sprinkle with desired fruit, nuts, seeds and granola toppings.
Squeeze with a wedge of lime.

Grab a spoon and enjoy!

Papaya seeds have a sharp black pepper taste and slightly bitter. But packed with fibre, antioxidants, aids in regulating cholesterol and contains enzymes that kill bacteria.
